 Healthy Red Beans & Rice – I have added a healthy serving of veggies and given this old favorite a new twist with turkey sausage

 Chicken Breasts with Prosciutto and Sage – Fresh Sage and Prosciutto are wrapped around chicken breasts, sautéed, then topped off with a light sherry sauce.

Chicken and Dressing Casserole – Just like mom use to make. This one-dish dinner is family friendly; even the pickiest kids love it.

Chicken in Picante Sauce-  Spicy chicken with picante sauce, green peppers, and cilantro served with rice

Spicy Jerk Chicken – Boneless skinless chicken is served with black beans and grilled pineapple slices

Glazed Cornish Hens- A lovely dish of Cornish Hen with an apricot and soy sauce glaze stuffed with wild rice

Stir-fry Ginger Chicken-  Chicken flavored with ginger garlic and tamari with broccoli, snow peas and water chestnuts served with jasmine rice

Pan-seared Chicken with Rosemary Dijon Gravy-  Boneless chicken breast in a rich Dijon gravy seasoned with fresh rosemary

Chicken Breasts with Feta Cheese Sauce - Boneless chicken breast sautéed and smothered in a rich cheese sauce served over egg noodles

Honey Pecan Chicken- This crunchy dish has a real kick! The sauce is made from Honey and Bourbon and this is one of my top 5 requested entrees

Emeril’s Chicken Cacciatore- This is a “kicked up dish” from Chef Emeril Lagasse, spicy and flavorful and served on a bed of fettuccine

Blue Cheese Chicken Pasta - Breast of chicken in a rich and creamy blue cheese sauce served over spinach pasta

Raspberry-Balsamic Glazed Chicken – From Cooking Light this recipe comes with an addictive sauce and is a new family favorite, it served over a wild rice blend with extra sauce so everyone will have enough

Pan Roasted Chicken with Rosemary and Garlic – This fragrant roasted chicken and the gravy that goes with it will tickle your tummy with delight, have plenty of bread on hand and only lick the plate if nobody is watching.

Coq Au Vin- The classic French dish that my Grandfather loved most, chicken stewed in red wine with mushrooms and onions ready in your crock pot and served over mashed potatoes

Turkey Cutlets with Dried Cherries, Rosemary & Port - The essence of fresh rosemary blends with deep fruit flavors to make this recipe quite special. The sauce is also well-suited to chicken or beef.

Rosemary Roasted Salmon-  The aroma of rosemary and lemon is great served with couscous

Crab Cakes with Creamy Cucumber Sauce-  This recipe is low-fat and delicious made with jumbo lump crab meat and lots of it, the sauce is cool and creamy, served with rice

Shrimp or Crawfish Etouffee-  A classic Cajun dish served with rice

Cajun Catfish- Spicy, low-fat broiled fish with fresh lemon served with coleslaw and spicy corn

Salmon Filet with Spinach and Feta Cheese wrapped in Phyllo - This makes an elegant entree and is the signature dish of Chef Karen from Calgary Canada

The Best Tuna Casserole – A classic comfort food from your past this is a great dish for kids and kids at heart.

Mom’s Creamy Crawfish over Rice - I don’t know where the recipe came from but my Mom has made this for years and it’s a real family favorite

Broiled Salmon with Spicy Maple Sauce - From Chef Roger Mollet this is a very low fat dish with a sweet and spicy sauce that is a great match to the texture and flavor of fresh salmon, it is served over rice and the sauce drizzled over top

Tuna Steak with Herb Dijon Sauce- Beautiful Yellow fin or Blue fin tuna steaks grilled to perfection and served with a savory sauce

Savannah Red Rice with Shrimp, Chicken, and Vegetables – This one dish meal is low country cuisine at its best, a little bacon brings a smoky, sweet flavor to the dish

Firecracker Shrimp – This spicy Asian dish with snow peas and a hint of orange flavor is served over steamed Jasmine rice

Sicilian Salad – An array of imported meats, cheeses, peppers, and olives accompany a marinade and other ingredients to make this salad a favorite dinner item for warmer weather. I serve it with a loaf of crusty bread and a bottle of red wine.

Italian Meatloaf – Sun-dried tomatoes, fresh basil, and parmesan cheese stand out in this recipe, served with garlic mashed potatoes

Beef Stroganoff over Egg Noodles- Made with only the best cuts of meat this is a favorite family meal finished with a green vegetable

Steak with Mustard Sauce- A creamy mustard sauce over pepper crusted beef tenderloin steaks

Apple Stuffed Pork Loin with Apple Ginger Glaze - Apples and pork make another perfect pair in this dish. You will have Sunday dinner taste with weekday dinner effort.

Eggplant Parmesan – Lots of cheese and garlic make this a great casserole to serve your family tonight, with a loaf of warm garlic bread

Fantastic French Onion Soup – Ready in your crockpot, this rich soup is a dieters delight hearty and filling and only 1 gram of fat, YUM!

Gazpacho – This cold soup is flavorful and light, it contains sweet and crunchy vegetables with fresh herbs and a rich tomato base set off with creamy avocado added for texture and flavor.
